Chili Chili.

Mondays after vacations are always the worst, aren’t they? You walk into the office all relaxed and rejuvenated and then see the hundreds of emails just waiting for a response. Needless to say, yesterday was busy! But I am feeling more positive and less stressed about work and my next step, so that is what counts.

I won’t bore you a laundry list of what I have eaten for the past few days, but I do want to share my Turkey Chili Recipe with you! As you may recall, I decided that chili was the perfect Sunday night dinner. I grabbed the ingredients, threw them in my crock pot and let it stew for a good 6 hours.

It turned out really good. I somehow forgot to add chilies or jalapenos like I normally do which was a bummer, but I made up for it by dousing it in a mixture of hot sauces.

 Turkey Chili
(adapted from Gina’s Skinny Recipes)

Ingredients:

  • 1 package ground turkey breast
  • 1 small onion, chopped
  • 6 cloves garlic, minced
  • 1 large can diced tomatoes
  • 1 can tomato sauce
  • 1 small can chopped chilies, drained
  • 1 small can chopped jalapenos, drained
  • 1 can chickpeas, undrained
  • 1 can black beans, undrained
  • 1 can small red beans, undrained
  • 3 tbsp chili powder
  • Salt & pepper
Sometimes I added extra cans of beans (drained) to make it a little thicker, or a can or corn (drained.) I’ve also added a smoked ham shank to it before which was delicious! (But makes it a bit higher in fat obviously.)
Directions
Brown the turkey and add it to the crock pot (or a big pot if you don’t have a crock pot!) Add the remaining ingredients and let it stew on high for at least 4-6 hours (the longer the better in my opinion. (If in a pot on the stove, bring to a boil and let simmer for a few hours.)
Toppings
I have added lots of toppings in the past including:
  • Cheese
  • Sour cream
  • Plain Greek yogurt
  • Avocado (sooo good!)
  • Diced red onion
  • Fresh cilantro
  • Hot sauce
  • Corn bread & more!
The options are really endless 😀
I normally make this meal when its colder out, but I decided that I wanted it now and I wasn’t going to wait! It’s perfect for a Sunday night meal, with leftovers for the rest of the week! I will probably eat it for lunch almost everyday!
