Dog Walk Fail.

I woke up this morning a little sore (thanks Jillian) and a little lazy. I poured myself a cup of coffee and let it slowly hit my bloodstream hoping the caffeine would give me a pick me up and some motivation to make something substantial for breakfast. The laziness won and a bowl of cereal was all I could muster up for breakfast. At least I added some fancy toppings?

Milk overload.

Maple + Brown Sugar Frosted Mini Wheats, banana, blueberries plus a sprinkle of chia seeds on top. Easy peasy. Good thing since I was still feeling lazy as I chomped away at my cereal.

I finally found motivation to get up and go on a walk. I’m taking it easy this week and just focusing on walking + stretching out my arch, so another 4 mile walk was on the agenda. When I told my mom yesterday I had gone on a walk without Oliver (the dog) she had assured me that he could keep up and walk that far. “For sure.”

Well, she was for wrong! We headed out the door and had barely hit a mile when this guy was huffing and puffing.

He wouldn't even look at me 😉

I decided to make a loop back (in attempt not to hurt the guy) and we ended up back where we start 2 miles short of 4. C’est la vie le chien. I got him a big bowl of water and gave him a treat. Guess I’ll have to do it a bit slower and steadier before entering him in any doggy 5Ks.

I sat down for a moment to drink some water myself and contemplated going back out myself for the rest of the 4 miles, but decided 2 was not shameful and popped in the 30 Day Shred DVD for day 2 with Jillian. I’ll take the dog out once more later for a little walk (if he manages to wake up!)

What I like about 30 Day Shred is that you are constantly moving and constantly switching it up. I get bored so easy, so with the different intervals, you don’t have time to want to stop. Hopefully I notice a different after 30 days doing it. We (my butt and myself) shall see.

Lunch was another easy peasy dish. The second Roasted Chicken Patty from TJs on a Whole Wheat Bagel Thin with jalapenos hummus, cucumber and spinach.

Strawberries + carrots on the side for good measure (and a little color.)

These TJ’s Roasted Chicken Patties are awesome. I recommend them if you want a quick lunch packed with lean protein! Great on both a salad or a bagel thin.

I spent the afternoon looking for more jobs being lazy and reading blogs while snacking on another Mojo Bar eventually. (It is my birthday week, so that makes the laziness somewhat okay, right?!)

 These Mojo bars are pretty tasty. And since I can’t seem to locate the stash of Laras + Lunas I packed, they will have to do for now.

I am off to shower (yes, I haven’t done that yet, blame the laziness!) and then get ready to go to the Giant’s game tonight!!! I am so excited because they are my team and I was bummed because I didn’t think I’d get to go until next season. But my mom’s coworker was nice enough to give her tickets so I am reaping the benefits. I guess there are some perks to living at home. 😉

Even though they won’t be heading to the playoffs this year, it will still be fun to see them and enjoy a game in my new city. I’ll tell you all about it tomorrow!

Monday’s Eats + Sore Feet.

Okay, I know, the title probably doesn’t make you want to eat, after reading feet, but I couldn’t help myself. 🙂

Yesterday was a gorgeous day here in the city. Sunny, sunny with more sunny. Waking up on a sunny day just makes you want to spend it outside. I had a cup of coffee, leftover Kodiak Blueberry Pancakes with a little Justin’s Maple Almond Butter, some banana, Agave Syrup + some Chia Seeds on top.

Perfect fuel for a long walk around the city to get a little exploring in/ figure out where everything is. 🙂

I ended up trekking over 4 miles around the city. It felt good to move my legs, take in the Pacific Ocean air, and to see the amazing new city I am living in!

The walk was also a good idea since my foot has had some serious arch cramping since driving across the country. I have extremely flat feet and really need to do something about finding some running shoes that have better arch support. I  mean, my foot cramping from using the gas pedal for 5 days (even if it was all day) clearly indicates I need something to help me out!

The walk definitely help. As did the random arch stretching I did while on the walk.

Any arch supporting shoe recommendations out there? Overall, it was a nice long walk that really help me get a little more familiar with my city. And I only had to look at my iPhone map once or twice.

After my walk, and since I do not have a gym to use currently, I came back home and threw in Jillian Michael’s 30 Day Shred into the DVD player and did Level 1.

I’ve started this DVD a few times, and never get past doing it a few times in a row. Since I have no gym, I think Jillian might have to be my trainer for the next few weeks. So I am hoping to actually do this thing at least 5 times a week. Have you ever tried it? Thoughts?

After my walk + Jillian I had worked up quite the appetite, and whipped together a big salad.

In the mix: romaine lettuce, cucumber, celery, carrots, Trader Joe’s Roasted Chicken Patty, a sprinkle of cheddar + a little Light Champagne Vinaigrette from TJ’s as well. It hit the stop. I have missed homemade salads. Homemade everything for that matter, after all those Subway sandwiches last week! (Just writing Subway makes me go blah!)

After lunch I got to work getting things organized. While I have a very, very good lead on a job with an in person interview for it next week, I do not want to place all my eggs in one basket, so I spent the afternoon looking for jobs which I will apply for today! I also did a few other tasks that I needed to get done, and while typing away, eventually snacked on a Mojo Bar my mother bought a Costco pack of on Sunday.

This one was pretty tasty. Definitely good for someone with a sweet tooth, which for me is some days true, some days not.

Oh and I might have been doing all this work while watching the first season (not in its entirety…yet) of Sex and the City. The entire series is in this apartment. This could be a good or a bad thing, but as long as I am productive, then it can stay on… right?!

For dinner, I had a chicken that needed to be roasted, so I did a little research, and decided to make a Roast Chicken with Lemon + Thyme. I also decided to take a few more pictures while making it, in case you guys were interested. What I love about this recipe is its simple ingredients that create a delicious, fresh flavor. I have been all about fresh tasting food lately, haven’t I?

Roast Chicken with Lemon + Thyme
Adapted from 


  • 3 tablespoons minced fresh thyme
  • 2 tablespoons extra-virgin olive oil
  • 5 garlic cloves, chopped
  • 2 teaspoons grated lemon peel
  • 1 7-pound roasting chicken
  • 1 lemon, quartered


Preheat oven to 450°F. Mix first 4 ingredients in bowl.

Rinse chicken; pat dry.

Place chicken in roasting pan. Rub all but 1 tablespoon garlic-thyme oil over. Sprinkle with salt and pepper. Place lemon in cavity of chicken.

Roast chicken 20 minutes at 450°F. Reduce oven temperature to 375°F. Roast chicken until meat thermometer inserted into thickest part of inner thigh registers 180°F, about 1 hour 15 minutes.

Let chicken sit for several minutes + enjoy.

I served the chicken with a little brown rice + roasted asparagus on the side. It was a perfectly fresh, delicious and simple meal. The only downside is the length of time it takes to cook the chicken, but it is well worth it. Trust me.

This was actually way too much chicken for me to eat, so I only ended up eating about half, but I am terrible at cutting chicken off a whole bird… this girl needs lessons stat! Overall, it was a great first Monday in San Francisco!

It seems that every free second I have right now I am thinking about my move! It’s mostly excitement, with a dash of scared + a whole lot of what ifs. And this is fine. It’s good to think things through – just not at 2:00am when I was tossing + turning last night with my restless thoughts.

"Don't you dare say I look tired."

I think I was awake from around 2:00am – 4:00am, so this morning when my alarm went off at 6:00 for my workout I was so not ready to get up. I reset my alarm and hit the hay for a few more minutes of precious sleep. It’s okay though. I can get my workout in later today or tomorrow AM since I have nothing scheduled for Friday. Winning.

When I stumbled out of bed I headed to the kitchen to see what was available for good old breakfast. The answer? Nada. No bananas, no milk, no yogurt. What’s a girl to do? I took it as a sigh that I was suppose to be lazy for breakfast today and picked up Subway on the way to work. The breakfast egg white sandwiches make me a happy camper. And I even get my veggies in the AM. No complaints there by this girl.

Being at work is somewhat awkward right now. Since I know that I am quitting but haven’t officially resigned (my boss is out of town until next week + I want to do it when he gets back in person) I am trying to still perform well but not take on any new projects as I will not be around to finish them. This is somewhat responsible I think, but somewhat selfish at the same time. Let’s just call it a gray area, shall we?

Lunchtime rolled around and I pulled out leftover pasta from Monday night. This stuff is always good the a few days later with some hot sauce on top. Trust me, I’m a doctor telling you the truth.

There are veggies in there, I promise! They just tend to sink to the bottom. 🙂

Now I am going through emails and deleted the ones with silly coworker banter in them. I’ll have to pass my emails to whomever replaces me, so I suppose I should keep it professional in there. I have about 6,000+ more to go + my eyes are already tired. This should be interesting.

Taking a little break now to enjoy a couple of a plums.

Scratch that, only one plum. One was sour + gross! I hate when that happens.

How is your Thursday going? And what do you do when you can’t sleep? When I was little my mother used to give me a glass of milk, but since I had none, I just tossed + turned. I’m thinking I’ll sleep better tonight! Fingers crossed.

I’m Going Going, Back Back…

… To Cali, Cali!

I’m sure if you follow me on twitter, you have probably guessed by now that I decided to take the leap and move to San Francisco!

I am excited, scared, anxious, happy, overwhelmed but ready to take this head on.

Oh and by the way, I need to be out of my apartment by September 20th!!! While this is so soon, its okay because that means I will be home by my birthday (September 30th) and that means I am going to be started my 27th year off fresh and focused in the state I want to be it. And that has to be a good sign.

I have a lot to do in less than a month, but I know I can get it done. Probably the only thing I know for sure as of this moment is that I will be driving. Hopefully this is my last cross country road trip ever because it is definitely not my first.

I will keep you all in the loop as I go, but I just want to say THANK YOU, THANK YOU, THANK YOU to all of you who had the nicest words of encouragement to say to me. I appreciated them all so much and they really did give me that extra push to make this decision.

So with all that being said, here goes nothing!! California here I come!


It was so nice yesterday to be able to make lunch in my own kitchen. I think this is my new dream. Making lunch at home everyday. I am going to try to live as close to my new office as possible (you know when I get my dream job after I land in SF next month) so I can walk home for lunch.

I whipped up a pretty tasty salad complete with lettuce, onion, cucumber, feta (fat free,) hummus guacamole, a slice of turkey + a strip of turkey bacon. I also put a little Trader Joe’s Fat Free Balsamic on top. First time having this + I loved it!

A little while later I had a snack of banana + Dark Chocolate PB + chia seeds. Yum, yum + more yum.

A little while after my snack I headed to the gym for my 2 miles that I needed to make up for after missing it this weekend. And you know what? It felt so good. I think with all my news, I just needed to run! I warmed up and planned on running 1 mile, doing a breather and then doing the other, but at 1 mile I knew I could do more so I kept on running until I was at 2 miles. It felt pretty good! I cooled down, and did some upper body strength work (lat pull downs, rows, chest press + some ab work) and called it a workout.

I made a quick + easy dinner afterwards of whole wheat pasta, zucchini, mushrooms, onions, garlic + chicken sausage with some olive oil on top. Oh + a sprinkle of freshly grated parmesan. 🙂

I also had a I’m-moving-back-to-California-celebratory glass of wine, + I ended my night with one of these.

Have you ever driven cross country? Favorite route? I think I know which way I’m going but I probably won’t share until I get to CA! (Safety first!)

Everybody sleep, sleep, sleep.

Last night I went to bed quite late. We are talking almost midnight here people. I know, I am old, and consider (almost) midnight to be a late bedtime when my wake-up call is 7:00am. The strange thing about it is though is most mornings I wake up and have to peel myself out of bed, but this morning I woke up, naturally, at 6:30am feeling pretty darn good. Something to think about I suppose.

I read a bit about sleeping today, specifically oversleeping,  and how much sleep one needs. Most websites seem to say 7-9 hours for adults, but there were lots of interesting theories.


So I am putting it out there. How much sleep do you need to feel rested?

I think I am between 7 + 8 but its something worth experimenting with perhaps.

After I woke up this morning I decided to join the cool kid’s club and have some Lemon Choboni for breakfast. Everyone seems to be in love with this flavor, so I figured I’d give it a shot.

It was pretty delish! I still love the honey flavor the best I think, but the lemon was actually refreshing for yogurt. A word I never thought I’d used to describe yogurt in fact. I paired my yogurt with:
* 1/3 cup Trader Joe’s Low Fat Vanilla Almond Granola
* 1/3 cup Kashi Go Lean Crunch
* Strawberries
* Blueberries
* 1/2 banana
* 2 tsp Chia seeds

Filling, fruity, and patriotic fun. I used to eat breakfast once I got to work, but I have found that taking the time to eat in the morning and take a little me time, really slows the pace down of my morning and really puts me in a good mood before heading out the door. Sometimes it’s the little things. 😀

Work was moving slow this morning and around 10:30am I decided a little treat was in order. I keep a fruit bowl of sorts on my desk with fresh picks, and a mango was calling my name. Mangoes have been awesome this season. Fresh, ripe, sweet and juicy.

I sliced it up and dug in while typing away at this and that. So good.

Lunch time approached fast and I headed to the office fridge to grab the other half of my panini and broccoli salad from yesterday. I put the panini in the microwave for a few minutes, and it was (almost) as good as yesterday.

The broccoli salad was definitely better than yesterday though. It had time to sit and get all tasty.

My co-worker took a late lunch and brought me back a little treat around 2:00 or so. A vanilla Frosty. I do not think I have had a Frosty in about three years or something, and have never had a vanilla one. It was the perfect afternoon indulgence. Usually I have dessert after dinner, but today I had it before. 🙂

I headed home from work and headed to the gym for a quick run. After yesterday’s first trip back on the treadmill after my toe surgery, today I felt ready to push it a little more. I hopped on the treadmill and ran a mile at 10:54. Slowed down and walked .25 miles, then ran another .25 miles at 10:00 (which is fast for this girl,) and finished out by walking until 20 minutes was up. Just a quick workout, followed by some stretching. Better than nothing. I don’t want to over do my toe, and I know I need to ease into running. I have been reading a lot of tips, and after my vacation next week I am going to get back on some kind of schedule, so that I continue to increase my mileage and speed. I am still new to running. But I am really loving it. I love how I feel after a short run, so I can only imagine how good I feel after a long run.

I got back from the gym, and realized that I had nothing planned for dinner. I scrounged around the refrigerator and found some turkey meatballs from Trader Joe’s in the freezer, spaghetti sauce, whole wheat pasta, red bell pepper, mushrooms and onion, so I threw everything on the stove and made it for dinner.

It’s been so hot, but luckily the AC works well in my apartment and it was a nice comfort meal. A little sprinkle of fresh Parmesan on top and dinner was served. Would have like to have more veggies in there, so I guess a big salad is in order tomorrow! And perhaps a little dinner planning.

I’m off to watch some more Mad Men. Sweet dreams! Don’t oversleep 😉
